Black Forest Cupcakes





Cherries and chocolate were practically made for each other. When I was brainstorming for this treat, the only thing i could thin of with chocolate and cherries are those tooth-hurtingly sweet Cordial Cherries that are popular around the holidays. Rave reviews on these at the office (especially the frosting)! The cupcakes are moist and packed with a cherry surprise and the frosting is whipped to perfection. This is a recipe to keep bookmarked.

Applesauce Cupcakes






My grandma has a stashed recipe for applesauce cake that is very similar to this one. This is a very moist cake that has optional raisins and pecans throughout; I don't recommend removing either because they add great texture to the cake. Take a bite, "Oh hello pecan!" It also doesn't get any better than topping the cake with classic cream cheese frosting.

Homer Simpson would be a very happy man. This recipe is really versatile because you can mix in fresh berries, chocolate, etc to create a tasty treat. You can also try a variety of frosting and toppings to make these doughnuts exactly what you need to curb your cravings.

Pumpkin Cheesecake Swirl Cake







A dessert that looks like it takes a lot more work than it requires. This is a really great fall-spice inspired recipe. I appreciate that this recipe is prepared in a bundt-pan because my grandma is and always will be PRO-BUNDT.

Moist Chocolate Cake


I had a request at work to make a moist chocolate cake with whipped frosting; this is my result. I was originally going to simply buy a cake mix, but $3 for something I have all the ingredients at home for?!? NO THANK YOU!! I also provide a really great recipe for yummy, whipped chocolate frosting that may give you enough for some left overs to enjoy ;) Oh, this picture is not Photoshopped; the cake is really that moist!

Perfect Pancakes






I had to get a recipe that was going to be successful then I was teaching my 6th and 7th graders; here is what I've got! They are hard to mess up and are that great combination of fluffy, sweet and chewy. Top them with your favorite syrups, nuts, or chocolate chips (which were a particular favorite with the kids). I know my grandpa would just spread on some homemade jam and call it a meal fit for a king.

Orange Poppy Seed Cake







A simple twist on a classic cake. These are simple ingredients with a great outcome.  I remember my grandmother making lemon poppy seed cake all the time. The smell that filled the kitchen was nostalgic and sweet. Please enjoy this moist cake and think of your childhood :)

Dark Chocolate Lave Cake

Surprisingly, I had never made this cake before I made it for my husband's birthday. I looked at several different recipes to get an idea of what needed to go into them and then altered it based upon my baking experiences. They turned out perfectly! I will happily make these again because they were quick and easy. These chocolate cakes appear like you put more effort into make them than they actually require.

Pumpkin Roll

Believe it or not, this was the first jelly roll that I have ever made. It was a lot less complicated than I thought, but it did make a mess (which is fun). This obviously looks like a jumbo Little Debbie Swiss Cake Roll, but pumpkin flavored. My family loved it and asked me to make it again for Thanksgiving.It is a cake that bakes really quickly and packs a punch in the flavor department. If you're looking for a great dessert that looks like it took a lot of effort (but didn't) this is a winner!

Dairy-free, Gluten-free Peanut Butter Cake






It was my co-workers birthday last week and I love to celebrate birthdays; I love baking birthday cakes even more! I know that food allergies are becoming more prevalent in society, so I wanted to show that an allergy restriction doesn't necessarily mean giving up things that you love. Now in this recipe, I add 1/4 cup gluten-free baking mix; this isn't absolutely necessary, I just felt it gave the cake more structure and body.
