Sweet and Spicy Citrus Tilapia






A twist on fish that you don't really expect. It still holds a firm fish flavor (try saying that 10 times fast), yet offers the tastes of sweet and sour chicken. A marriage of two very unique flavors that pairs well with rice and fresh or steamed vegetables. The sauce is thin and the recipe provides enough of the sauce to pour over whatever you pair with the fish.

Blackened Salmon







This is one of my first experiences with salmon and it turned out great! It has created a lot of new ideas that I hope to try in the near future....maybe some cedar planks or the grill.

Bacon-Wrapped Scallops

I was feeling adventurous when I took on this dish. My husband was hesitant trying scallops, so I figured if I wrapped them in bacon he would be a little less intimidated. This was successful! In addition to introducing my husband to new cuisine, I also learned more about scallops. You know the typical seashell that has the "scalloped" edges? Yep, that's where these meaty medallions come from. I never put two-and-two together.
