Chicken Hobos



This recipe brings me back... I remember having this for dinner a lot when I was growing up because it was something that we could all agree upon (that and Dad's homemade pizza). This recipe takes little preparation and cook time and is sure to please everyone!! You may wonder why they're called "hobos" and to be honest I'm not sure when my family started calling them this... ANYWAY, we call them "hobos," because, similar to a hobo, you throw everything you need into a sack or package. This recipe can be altered to fit you and your family's tastes, but this is how my family has always prepared them, but replacing the hamburger with chicken.


Tips:
Well rested - when you take these out of the oven or off of the grill, allow them to rest for at least 5 minutes in the foil. The juices will release from the chicken and soak into the vegetables (not to mention it will cool off...HOT CHICKEN=Burned mouth).
Grill or oven - this recipe works for both grill and oven, use what you've got; I provide the directions for both cooking methods. The grill does add a different flavor. 
Fiber - if you'd like, keep the skin of the potatoes and carrots on. Not only does it provide more nutrients, it's also one less thing to prepare.

Oven Temperature: 400 degrees
Grill Temperature: Medium High Heat
Prep Time: 5-10 minutes
Cook Time: 20-30 minutes
Servings: 4 pouches

4 chicken breasts boneless, skinless, thawed
4 medium potatoes, peeled and cubed
4 medium carrots, peeled and cubed
1 large onion, quartered
1 Tablespoon seasoned salt
Pepper to taste
1 cup chicken broth


Directions:

1) Preheat the oven to 400 degrees or the grill to medium high.

2) Roll out 4 sections of aluminum foil, each about 12" long. Fold each piece of foil in half; pinch together two sides of the foil to create a pouch. Set aside.

3) Place the potatoes, carrots, and onions into a large bowl. Sprinkle the seasoned salt and pepper over the vegetables and toss to distribute the seasoning. 

4) Scoop 1/4 (about 1.5 cups) of the seasoned vegetables into each pouch. 

5) Place a chicken breast into each pouch on top of the vegetables. 

6) Pour 1/4 cup of chicken broth into each pouch and pinch the last opening shut. Be sure to seal these well.

7) Place in the oven or on the grill for 20-30 minutes or until the vegetables are tender and the chicken breast reads 160 degrees with a meat thermometer.

8) Allow the packets to rest for at least 5 minutes and enjoy!

    1. Salted water can also be used (1 cup water + 1 tsp. salt). You're just looking for something to help keep the chicken moist.

  3. Do you have the chicken flavored cubes if so it shows you on the container how to make broth with it!!!
