Samoa Pie






This is just a really big Girl Scout Samoa cookie in pie-form (also less work). This pie recipe really means a lot to me because it was the last pie I ever made for my father...he passed away the day after Christmas and life hasn't been the same since. I was happy to make him his favorite Girl Scout cookie in pie form before he left us so soon. Much love to my papa!

Pumple Pie

 


Yes, it's exactly as it sounds; I have combined the traditional pumpkin and apple pies. I'm surprised that I had never tried it sooner because they both use similar spice and cooking temperatures/techniques. The result of this recipe is not only delicious because you get both flavors that come through, but visually you get a pumpkin pie with apple slices; it ends up resembling leaves floating atop your pie! How very Fall weather appropriate?

Perfect Pie Crust






I can't take all of the credit for this recipe because there is one reason behind my pie crusting skills: MY MOM!! She disliked making the pie crust so much that I got a lot of practice in order to perfect my pastry dough. This dough is easy because you don't have to "refrigerate this" or "pulse that"; it a one bowl, easily transferred, 10 minute crust.

Triple-Berry Pie

I spent the day with my mom today and after a long day of window shopping, we decided to make a pie. Many members are allergic to strawberries (NOT ME ;P), so I knew we couldn't make anything with "evil berries," as my mom likes to call them. I had lots of frozen berries and mom tells me that she has never made a lattice-top pie before...that had to change. I realized that it is so much easier to make a lattice-top pie when there's another person helping you. The pie made the house smell amazing and I got to cook with my mom again. I was a happy camper.
