Pumpkin Muffins



Cinnamon, nutmeg, cloves and ginger...all of the spices of Fall. Along with the spices, come the pumpkins and squash! Although considered a "SUPER FOOD," I find that the only tastes of pumpkin are being experienced through a special ordered latte at the coffee shop. This is a recipe that isn't too sweet and allows the pumpkin flavor to shine through the complimenting spices. These are great alone, with a little honey or just a good swipe of butter.

Dark Chocolate Chunk Oatmeal Cookies



Dark chocolate has been discovered to have a number of healthy benefits. It aids in the healthy function of the heart and brain, can help control blood sugar and pressure and is packed with antioxidants, vitamins and nutrients. Some might even refer to dark chocolate a "super food." I know that not everyone enjoys the sometimes bitter taste of dark chocolate, so this cookie is a great way to take in the healthy benefits of dark chocolate with portion control and by making the flavor easier to handle.

Monster Cookies






I've made a cookie or two in my time, and it seems that the monster cookie that is often overlooked. It is basically a combination of all of the most popular cookies: peanut butter, chocolate chip, M&M, and oatmeal raisin. Intrigued? Give this recipe a shot! I promise you will not be disappointed. I find that using all oats makes the cookies hard and crumbly, so I incorporate a little flour to hold it all together.
