Junior Mint Truffle Brownies







What a minty treat this is! After serving these at work, I was told "these brownies are absolutely the best thing ever. They are as if a brownie and a thin mint had a baby. I cannot get over how good they are!" I can't argue with that. This a great mint and chocolate combo that will make you come back for more.

#10 Blondie Ambition Bars







Ben & Jerry Cookie #10 Blondie Ambition. "A buttery brown sugar ice cream with blonde brownies and butterscotch toffee flakes." This is my interpretation; a browned-butter toffee blondie. A traditional recipe that is taken up a notch by adding a depth in flavor by browning the butter. Are you drooling yet?

Strawberry Lemonade Cheesecake Bars



This is a simple summer dessert. The crust is the only thing that I bake in this recipe, but it can be made into a no bake recipe as well (read the tips below), but I like to bake the crust because it holds together and doesn't crumble. I know my mother will comment on this because I used strawberries (which she is allergic to), but the preserve flavor can easily be changed. I think blueberry or raspberry would work extremely well in this recipe too. I used Neufchatel cheese and half-and-half to lower the fat content of a regular cheesecake.

Orange Peanut Butter Bars




This was my first recipe challenge and I must say, it turned out very successful. The bars are moist and flavorful. This is an interesting spin on a classic lemon bar and has surprisingly great flavor profiles in every bite.

Neapolitan Brownies

I was feeling really creative today and I wanted to experiment with a dessert. I always loved Neapolitan ice cream growing up and I wanted to bring those flavors into a dessert that didn't need to be stored in the freezer. The method of making these little gems is similar to making a marble cake. You get a little bit of everything; rich chocolate, the smooth vanilla, and the sweet strawberry flavors. I love the way it looks when it is finished because it brings back memories of big bowls of ice cream with my grandparents.
