Shredded Turkey Tacos

 




Tired of plain, dry, lifeless leftover bird? Instead of dousing it with gravy, this is a great way to use up that Thanksgiving turkey!! It takes only a few minutes to prepare and can be suited to all of your family member's tastes. This mix of herbs and spices is universal and can transform any dish into a taco flavored masterpiece.






Tips

Dark or light - dark meat works particularly well in this recipe because it has a bit more fat in it, but the white meat absorbs the flavors well. I used a mixture of both.
More meat - this recipe is easily multiplied and can be made to the size of the crowd you're feeding.


Prep Time: 5-10 minute
 Servings: 2 cups or 4-5 tacos

2 cups cooked turkey, shredded
1 Tablespoon ground cumin
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon red pepper flakes
1/4 teaspoon coarse ground black pepper
1/8 teaspoon ground cayenne pepper
1/4 cup water
1 Tablespoon lime juice
4-5 soft or hard taco shells
Toppings of your choice

Directions:

1) Place shredded turkey into a medium microwave-safe bowl.


2) Combine spices and sprinkle over turkey. Toss to coat evenly.


3) Combine water and lime juice and pour over the seasoned meat.


4) Cover the bowl loosely with plastic wrap. Microwave on high for 1 minute. Stir the meat, recover and microwave for an additional 30 seconds. 


5) Serve warm and top with your favorite taco fixings.
