My nephew is an absolute monkey! For his last birthday, I made him these monkey-inspired banana treats and he (along with the rest of my family) gobbled them right up. Make these if you're ever having a nana craving.
Microwavable - if you choose not to brown the butter, all of the melting can be done in microwave -safe bowls and not pans to wash later.
Spice it up - I didn't get a chance to try this, but I think a bit of cinnamon would taste great either in the batter or the frosting.
Oh nuts - 1/2 cup of chopped walnuts would also be a great addition (during Step 5).
½ cup butter, melted or browned (if desired)
Oven Temperature: 350 degrees
Prep Time: 15 minutes
Bake Time: 25-30 minutes
Servings: 1, 8x8 inch pan

1 cup light brown sugar
1 egg
1 1/2 teaspoon vanilla
1/4 teaspoon salt
1 cup flour
1 medium mashed banana (1/2 cup)
Brown Sugar Frosting
1/4 cup butter, softened
1/2 cup light brown sugar
2-3 Tablespoons milk or half & half
1 cup powdered sugar
Directions:
1) Preheat the oven to 350°. Line an 8x8 baking dish with foil
and spray with cooking spray. Set aside.
2) In a small saucepan, melt the butter over medium heat. Continue
cooking, by swirling the butter in the pan until the butter reaches a deep
golden brown color (3-5 minutes). Remove from heat and allow it to cool for 5
minutes.
3) In a medium bowl, combine melted (or browned) butter and
sugar. Mix until combined.
4) Add in egg and vanilla and continue mixing until
incorporated.
5) Stir in salt, flour and banana until batter is smooth.
Spread into your prepared pan.
6) Bake for 25-30 minutes or until the center is set and the
bars are lightly browned.
7) Allow the bars to cool at least for 20 minutes before
frosting.
8) In a medium saucepan melt the ¼ cup of butter. Add brown
sugar and milk and stir until mixture comes to just a boil. Remove from heat
and allow to cool for 5 minutes.
9) Whisk in the powdered sugar and spread evenly over the top of the blondies.
10) Allow the frosting to set and blondies to cool
completely before cutting into squares.
