In my family, it is almost a guarantee that we make too much food at our holiday gatherings, so there are plenty of leftovers. This is a quick idea to use up those holiday leftovers! Use what you've got: sweet potatoes, stuffing, broccoli, turkey, chicken, WHATEVER; turn it into a yummy hash :)
Tips:
Over-stirring - don't be tempted to stir this too much. Allowing the ingredients to brown well allows for a deep, rich flavor. Stir every few minutes or do what I do; stir when it smells brown :)
Prep Time: 5-10 minutes
Cook Time: 15-20 minutes
Servings: 4-5 servings
Directions:
1) In a large skillet, heat/melt the oil or butter over medium heat.
2) Add the cubed potatoes to the pan and cook for 8-10 minutes until potatoes begin to brown.
3) Add to the pan the ham, vegetables and stuffing. Cook until the ingredients are heated through (about 7-10 minutes).
4) Remove the pan from heat and serve.
1 Tablespoon butter or oil
4 large cooked potatoes, cubed
1 cup cooked meat,diced
1/2 cup cooked vegetables, diced
1 1/2 cups stuffing, prepared
