I was challenged to transform $1 chicken tenders into something that looked and tasted even better. This is definitely a few steps upward in both of those departments! I did all the preparation and cooking in less than 15 minutes. This is a college dorm friendly recipe!
Tips
K-I-S-S - Keep It Simple Stupid!!!
Prep Time: 15 minutes
Servings: 2 servings
(1/2 cup rice; 1 cup chicken)
12 chicken tenders
1/3 cup orange marmalade
1 Tablespoon soy sauce
1 teaspoon (2 cloves) garlic, minced
1/4 teaspoon red chili flakes
1/4 teaspoon Tabasco sauce
1/2 teaspoon onion powder
1/2 cup cold water
1 Tablespoon cornstarch
1 cup prepared white or brown rice
Directions:
1) Prepare the chicken tenders according to microwave oven directions (usually 2-5 minutes on a plate).
2) Remove the tenders from the microwave and allow them to cool down. When cool, break the tenders into 1 inch pieces. Set them aside.
3) In a microwave-safe small bowl, combine marmalade, soy sauce, garlic, chili flakes, tabasco and onion powder. Mix until combined.
4) In another bowl (or measuring cup) dissolve the corn starch in the cold water and slowly add it to the marmalade mixture.
5) Place the sauce mixture into the microwave for 30-40 seconds or until the mixture begins to bubble in the center.
6) Toss the chicken pieces with the sauce and serve over rice.
